I haven’t updated any new recipes for a while, so I thought I’d get at that today. At the moment I have a lovely Sunday roast in the crock-pot, with some celery, onions, garlic, thyme and rosemary. I just love a Sunday roast! I’ll let you know how that goes when it’s cooked.
I also made some fantabulous patè today. I’ve been craving patè lately, and can’t have any of them that you can buy in the stores, there are too many extra ingredients that I either cannot identify, or are not AIP (autoimmune protocol) friendly. So I thought, yeah, I can make my own patè! And I went a-Googling. The one I decided upon was this one from The Paleo Partridge (direct link in the recipe). I bought some chicken livers from my local Healthy Meats store yesterday (ridiculously inexpensive! Offal is so much cheaper than muscle meats! If you’re Paleo on a budget, buy some organ meats!).
I cut off all the bits of connective tissue (my sister would have gagged and probably fainted had she walked in the door for an unexpected visit!). The raw texture is a bit slimy, but strangely not. If you follow.
It was very yummy. At first, when it was still a bit warm, I thought it might be too thymey, but once it cooled some more it was quite nice. I had it with some veggies, but I’m sure it would be really good with some crackers. The Paleo Mom has a recipe for plantain crackers that I’ve been meaning to try, I just can’t find any nice plantains around here, they’re all too ripe and totally bruised!
Another recipe I just posted is Paleo Beef Stroganoff. I missed the Hamburger Helper beef stroganoff from my pre-celiac diagnosis days. I used to love that stuff, garbage though it was. And is! It’s so easy to make it from scratch (with zucchini noodles instead of grain based noodles), I can’t imagine why anybody would ever buy Hamburger Helper again!
Then there’s the Spaghetti Squash Shrimp Stir Fry. This just kind of “happened” one evening that I was home alone (Mum was at dialysis) and there was this spaghetti squash in the fridge taunting me to come up with something to do with it. It was another one of those “what’s in the fridge that I can toss in a pan and eat?” kind of things. Turned out really nice too! T’was great as leftovers the following day for lunch as well.
And of course I just loves me some dessert! Before I started my journey to health, I was a junk food junkie, and would often just have dessert for breakfast, lunch and/or dinner! Of course now I consider most of the foods I used to eat nothing more than glorified desserts, no matter what the manufacturers label it (have you ever looked at the sugar content of most breakfast cereals? I mean really! Even the “healthy” ones!). But I never could handle the texture of pudding type things, like custard. And I never liked avocado until probably 2009-ish. Now I eat it daily and love it. Either in my lunch salad, or for dessert in avocado pudding.
Well, that’s all the things I’ve come up with on my own lately (except the patè of course, I totally stole that one!). I will certainly let you know if I come up with anything else. You’ll be the second one(s) to know! 😉
